recipe || rachel's biscotti

My lovely friend, Rachel, is one of the sweetest, most genuine, kind, and thoughtful people I know. She and her hubby, Phil, and their son, Isaiah, moved into the apartment across from ours this past summer and we have all become fast friends. Their friendship to our family has been such a sweet answer to prayer. We adore these people! Isaiah and AK are the best buddies and Rachel and I often spend mornings together sipping coffee and chatting while our Littles play.

One of the first times AK and I went over to their home Rachel had fresh biscotti made to accompany our coffee and it was the best biscotti I've ever had. With the crunch, the sweetness, the's a winner. You must make this and share it with your friends over coffee and heart talks. That's the best way to enjoy it.

Rachel's Biscotti

1 cup sugar

1/2 cup butter

1 tsp. vanilla

2 eggs

3 cups flour

1 Tbs. baking powder

1/4 tsp. salt

1/4 cup chopped almonds, pecans, or mini chocolate chips

Directions: Cream softened butter & sugar. Add vanilla & eggs & beat until fluffy, smooth mixture. Add flour, baking powder, & salt at once & mix just until everything is mixed & like a thick cookie dough. Add in nuts or chocolate chips. 

Divide batter in 2 sections. Roll out into log shape then place on a greased air bake or thick cookie sheet. Press the 2 log shapes down to about 1/2 inch thickness. 

Bake for 25 minutes at 350 degrees. Reduce heat to 325 degrees. Cut the biscotti into the thickness you want & arrange them on their side. Bake for 10 minutes on each side. They should be nice & golden brown when you take them out. 

Melt chocolate & drizzle over the top & sprinkle on shaved almonds.
